Reece's Peanut Butter Energy Balls

Chocolate and Peanut Butter need no introduction. These two go together like a golden retriever and a tennis ball or a college town and liquor stores. We all know that this flavor combination is amongst one of the greatest inventions ever, so I decided to make a fun twist on the classic. Energy balls are all the rage nowadays, so I wanted to get in the game with with my own balls (yes that came out exactly as you think it did). My balls are full of all the good stuff like chocolate, peanut butter, and coconut!

These little balls of energy are packed with everything your body needs for a proper fueling. Healthy fats from the peanut butter, fiber from the oats, and happiness from the chocolate come together to form a melt in your mouth flavor. These are great after a workout or whenever you are in need of some energy!
Holy energy balls!
When I first made these, I didn't realize they would taste like a Reeces Peanut Butter cup until I made my mom try one. My mom isn't a big peanut butter fan, especially when it's the main ingredient (I know, she's cray). She doesn't mind it in candy or generally dipped in chocolate, but she tends not to like my recipes that are heavy on the nut butters. So when I forced her to try one of these balls, I was prepared for her to tell me she wasn't the biggest fan... however I was pleasantly surprised to hear how much she liked it! Let me just tell you people, if my mother would eat this peanut butter recipe, then this bad boy is the real deal!
Ingredients (makes about 20 balls):
1 C rolled oats
1/4 C chocolate chips
1/3 C shredded coconut
1/4 C peanut butter
3 tbsp honey
1/2 tsp vanilla
Directions:
In a large bowl, combine the oats, chocolate chips, and shredded coconut with a spatula
Add in the peanut butter, honey, and vanilla and combine
Place in fridge and leave it for about an hour to chill
Roll out into balls. As a tip, you might need to pinch them together to form balls if it seems like they won't stick!
Eat whenever you're in need of some tasty energy!
*These last in the fridge for up to 2 weeks!
