Chocolate Covered Coconut Balls that Taste like Mound Candy Bars

There are lots of things in life that you either love or hate, with very little room in between. For example, you either love pineapple on your pizza, or you hate it. You either love nuts in your chocolate, or you hate it. You either love nickelback, or you're like the rest of the world, and you think they're the worst band to ever exist. Another food that seems to fall into this category is coconut. I for one am a huge coconut girl...you might even say I'm nuts for coconuts ;)

Balls of coconut covered in dark chocolate... need I say more??


Actually, yes I will!


I love all things coconut, so this recipe seemed right up my alley. I think coconut is one of those unique foods that adds a layer of flavor that fills a certain craving. Coconut to me is what chocolate is to normal people. When you eat chocolate, it literally fills your brain with dopamine, a happy chemical that releases pleasure hormones that make you feel satisfied and happy. When I eat coconut, I feel as though the same thing is happening in a more tropical part of my brain.



These balls are so easy to make! The only time consuming part is letting them sit in the freezer while you wait! I have attached a little step by step of my process below!





Ingredients (makes 6 balls):

  • 1/2 C shredded coconut

  • 1 1/2 tbsp coconut milk

  • 2 tbsp coconut oil

  • 1 C dark chocolate chips (or whichever kind you prefer!)


Directions:

  1. In a medium bowl, mix the shredded coconut, coconut milk, and 1 1/2 tbsp of the coconut oil

  2. With your hands, scoop the batter into a ball and roll out. Repeat same process 5 more times until you have 6 little coconut balls

  3. Place the coconut balls in the freezer for 25-30 mins

  4. In a microwave safe bowl, mix the chocolate chips with 1/2 tbsp coconut oil and microwave for 30 seconds, or until chocolate melts (you'll probably need to take it out, mix it around, the place back in the microwave for another 10 seconds)

  5. Take balls out of freezer

  6. Drop one ball into the chocolate bowl at a time, making sure to coat each coconut ball by rolling the ball in the chocolate or until ball is fully covered in chocolate and repeat for each ball

  7. Place the balls on a plate lined with aluminum foil or wax paper and place the balls in the refrigerator for 10 minutes

  8. Enjoy!



These last best in the refrigerator for 3-5 days
