Healthy Banana Bread Oatmeal Chocolate Chip Muffins

In my opinion, the perfect breakfast food consists of the following details; it keeps me full for hours, it has ingredients that are good for me, and it is sweet! To me, these banana bread oatmeal chocolate chip muffins perfectly encompass the ideal breakfast food. For all those breakfast lovers who prefer savory over sweet flavors to start their mornings... wait until you try these muffins and then get back to me!



There was a point in my life where I would only eat oatmeal for breakfast because I thought it was the only option. I literally would eat oatmeal every single morning, regardless of if I really wanted it or not. On top of only eating oatmeal, I wouldn't put anything fun in it, like butter, sugar, maple syrup, chocolate chips, etc. because I was afraid to eat too many calories in the morning. Look, oatmeal is great and all, but let's be real... it's really not. I feel like every food account I see nowadays contains oatmeal for breakfast. That being said, I do love oats because they are high in fiber and are a complex carb (meaning they keep you full for hours because they are hard for your body to digest). Now that I no longer eat restrictively and eat intuitively, I love playing around with oat recipes!


To me, this recipe is so good because it provides the perfect balance of ingredients. It encompasses intuitive eating because it provides the foods that your body needs (like oats, honey, and bananas) and mixes it with the ones that your body loves (like a little butter and sugar).


These Banana Bread Oatmeal Muffins are so flavorful and sweet, that they are the perfect way to start your day. I personally have eaten one every day for the past week before I start my work day, and they literally keep me full for hours. And let's be real, you are only setting yourself up for success when you start your day with chocolate!




Ingredients ( makes about 12 muffins):


  • 3 medium sized and brown(ish) bananas

  • 2 eggs

  • 1/4 C of honey

  • 2 TBSP melted butter or coconut oil

  • 2 tsp vanilla extract

  • 1 C milk of choice

  • 3 C rolled oats

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 2 TBSP light brown sugar

  • 1/2 tsp cinnamon

  • 1/4 tsp sea salt

  • 1 C of chocolate chips or however many you want!

Directions:

*Preheat oven to 350 degrees*

  1. In a large bowl, mash the bananas

  2. Add in the eggs, honey, melted butter, vanilla extract, and milk until well incorporated

  3. In a medium bowl, whisk together the oats, baking soda, baking powder, brown sugar, cinnamon, and sea salt. Gently whisk for only a minute or so.

  4. Fold in the chocolate chips

  5. With a whisk or rubber spatula, add the dry ingredients into the wet

  6. With lots of PAM spray, grease a muffin tin and gently scoop batter into all 12 tins. Fill the batter about 2/3 of the way until the top

  7. I like to add more chocolate chips on the tops of my muffins before I put them in the oven

  8. Bake in the oven for about 14-18 minutes, or until tops are just slightly browned

  9. Let cool and enjoy!


Notes:

- I love to add peanut butter to my muffins for extra flavor. The peanut butter compliments the banana and chocolate chips so well!

- I stored these in my refrigerator for 5-7 days for maximum freshness
