The Best Pancake Recipe EVER

Friends, family, random people in need of a good breakfast, welcome to the best pancake recipe ever! These pancakes hit the trifecta: they are fluffy, light, and so easy to make. I absolutely love breakfast foods and have found many healthy versions of the classics. In all of my cooking, I have found that the way to make a proper pancake is to keep it simple and stick to the basics. I have tried every "healthy" modification there is to pancakes, from protein powder instead of flour to bananas instead of butter and sugar. In all of my endeavors, i have found that the best way to make a good pancake is by using the real shit. I'm talking butter, sugar, AP flour, whole milk... pretty much everything we've been taught to stay away because it's considered bad for you. What I have come to learn is that in moderation, all of these foods are good for you because they come together to make something beautiful. Not only do they make delicious foods for our bodies, but they make wonderful memories for our brains. Some of my favorite memories with my dad are waking up early on Sunday mornings to make pancakes for my family. Yet, as I grew older, I told myself I wasn't allowed to use sugar and butter in my breakfast foods because they're "bad" for you. I strayed away from the very things I loved most because I was afraid of what it would do to my body. Now, I recognize that every pancake eaten is a sign of a memory created!
Also side note, the way to make these as fluffy as possible is to not over mix the batter! When you over mix the matter, you expose oxygen to the baking powder, causing it to flatten. So, remember... mix light and your pancakes will turn out light too!
Ingredients (makes about 10 pancakes):
1 1/2 C AP flour
3 1/2 tsp baking powder
1/4 C sugar
1/2 tsp salt
1 1/4 C milk of choice (I use 2%)
1 egg
3 tbsp butter
1 tsp vanilla extract
1/2 C chocolate chips (optional but definitely recommended!)
Directions:
In a large bowl or mixer, mix the flour, baking powder, sugar, and salt
In another bowl, mix the egg and the milk
Melt butter and allow to cool
To the dry ingredients in the large bowl, add the milk/egg mix, the butter, and the vanilla extract
Mix only until ingredients are combined ( again, dont over mix!) and gently fold in chocolate chips if using
Allow batter to sit for 10 mins in fridge
Butter a skillet or a griddle
Using a 1/4 C, scoop batter and onto skillet/griddle
Wait for bubbles to form on each side before flipping
Enjoy with maple syrup and loved ones!
