High Protein Sweet Potato Vegetarian Nachos

Growing up, I never ate real nachos. Traditional nachos include a chip, cheese, and a meat. Since I grew up kosher, I couldn't have all the shredded cheese with beef or chicken, so I'd usually skip the meat component and just load my chips up with lots of cheese and beans! Even though I no longer separate meat and dairy, my parents do. So, whenever I am home, I don't eat the two groups together out of resect for my parents. Being at home during quarantine for about 2 months now has meant that most of my meals are either meat dishes or dairy dishes with a meat alternative. Thus, the creation for these nachos! My parents eat a lot of meat alternatives such as Beyond Meat and Morning Star Farm products, so we had the Beyond Meat Crumbles in my freezer and they seemed perfect for these nachos. They add this delicious and smoky flavor to the dish and in all my travels with fake meat, these come the closest to the real deal.

The crunch of the sweet potato mixed with smoke of the "beef" make these nachos a yummy alternative to regular nachos!
I love sweet potatoes for their naturally sweet flavoring, but I was a little concerned these nachos would come out tasting like sweet potatoe-y! But they didn't! My advice: ROAST THOSE POTATOES LIKE YOUR FAMILY ROASTS YOUR LIFE CHOICES AT HOLIDAY GATHERINGS
The key to making these nachos perfect is to make sure you crisp the sweet potato up just perfectly because when you do that, you take away a lot of the natural flavoring of the potato and make it a perfect crunchy base layer for you beans, corn, meat, salsa, guac, and cheese!
Ingredients:
3 round sweet potatoes (the roundness is key for making these chip like)
1 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
1 C Beyond Meat Crumbles
1 can of black beans, drained and rinsed
1 can of corn, drained and rinsed
1 C cheese of choice ( I used mozzarella)
1 tbsp fresh cilantro or 1 tsp dried (both optional)
1 pinch of kosher salt
Directions:
*preheat oven to 425 degrees*
Cut sweet potatoes into small round shape, about 1/8 an inch (to be exact!)
Coat sweet potatoes in the oil, garlic powder, and paprika
In a pan lined with aluminum foil and sprayed with pam or any other non stick spray, spread potatoes in an even layer
Bake for 20 mins on one side, then flip them all over and cook for another 10 mins or until the edges start to flip up and crisp
Take out of oven and layer the Beyond Meat Crumbles, black beans, corn, and cheese on top
Bake for another 8 mins or until cheese has melted until desired level!
Pair with guac, salsa, or sour cream
